Egg in the Hole

Sometimes the Simplest things are the best things. Case in point: Egg in the Hole. Whole Wheat Toast + Sunny Side up Egg = Perfect Breakfast. Since this Month is all about love we've sweetened it up by making the Hole Heat-shaped. 
The Deets are Simple:
Whole Wheat Bread
Eggs
Salt and Pepper to Taste
Butter
The How To
Lightly Toast a piece of your favorite Whole Wheat Bread
Cut a Hole or better yet, a Heart - set aside cutout 
Butter Bread
Place Bread in a Pan over Medium Heat
Crack Egg into Hole
Lightly Salt and Pepper to Taste
Cook until Egg is your desired "doneness" 
Mine took about 4 minutes to Perfect
Add a side of Grapefruit and a slice or 2 of Bacon and you've got a perfect breakfast.
This is also a great breakfast in bed for your sweetie....

German Pancakes

Looking for a new twist for your Sunday Brunch? German Pancakes {also known as German Babies, Dutch Babies or Dutch Pancakes} are a simple, delicious and much overlooked breakfast pastry. German Pancakes are quick and simple to make and are always a hit. Here's the simple deets on this delicious Brunch Item.

The Deets
6 Eggs
4 TBS Melted Butter
1 tsp Pure Vanilla Extract
1 Cup Milk
1 1/4 Cup Sifted Flour
1 TBS Sugar
1/4 tsp Salt
Lemon Juice
Powdered Sugar

The How To
Whip Eggs until Frothy Mellow Yellow
Add Butter, Vanilla, Milk, Flour, Sugar and Salt
Whip until ingredients are fully incorporated and smooth
PreHeat Oven to 425
Place a 9x13 Pan into the Oven for 5 Minutes to Warm
Spray Pan with nonstick spray (aka Pam)
Pour mixture into Pan
Bake at 425 for 20-25 Minutes
Beautiful!
Remove from Oven sprinkle with lemon juice and Powdered Sugar

Summer Breakfast Scramble

Summer is almost here, flavorful, fresh produce is abundant and fresh light dishes are on my mind.  This time of year makes me crave healthier food, full of fresh flavors!  Even Breakfast gets a quick fresh overhaul. Today's dish: Vegetable and Goat Cheese Scrambled Eggs.

The Deets for One
2 Eggs
6 Mushrooms Roughly Chopped
1 Large handful of Fresh Spinach - Chopped
1 Large handful of cherry tomatoes Quartered
1/8 Cup Crumbled Goat Cheese
1 TBS Milk
Salt to Taste

The How To
Sear Mushrooms until desired doneness (I like mine cooked well)
Add Spinach and Tomatoes for a quick Sear
In a Bowl Scramble Eggs and Milk
Add Goat Cheese
Add to Pan over Medium Low
Scramble for 3-4 minutes or until Eggs turn white
Plate, Pray & Enjoy!

The Perfect French Toast

I L-O-V-E - Love French Toast! 
I happen to be married to the World's Best French Toast Maker.
My Mr. cooks exactly 3 things: Toast, Oatmeal, and French Toast. But he makes the best Toast, Oatmeal and French Toast ever!  Seriously he does. His toast is so good - I think it's due to the reckless abandon in his use of butter. My toast is never as good since I am too stingy with the butter, so if he's home he's in charge of the toast.
I digress, back to the French Toast. 
A few weeks back I picked up a loaf of fresh Challah bread from our favorite bakery.  The Mr. was craving French Toast so I suggested we try making it with the Challah bread.  Because he loves me, he obliged. Let me say this - Best French Toast Ever! Even better than my Mr.'s normally delicious French Toast. It is light and fluffy and oh so good.
The Deets 
(For 2)
5 Slices Challah Bread or your favorite Wheat Bread
3 Eggs
1/4 Cup Milk (we use skim)
1/2 tsp Vanilla
The How To
Whisk eggs, milk and vanilla in a shallow bowl
Dip Bread in egg mixture
Heat skillet to Medium Low
Once pan is hot place in pan
Cook to desired shade of Golden Brown
Flip & cook otherside to perfection
{don't these slices kinda look like Easter Bunnies? -  Can you tell I'm excited for Easter?}
I eat mine with butter & powdered sugar.  
My Mr. drenches his in syrup.
Add a glass of milk, some fresh fruit and a little protein and you've got a great breakfast.

Rainy Day Breakfast

I love a good rainy Sunday
Rainy Sundays call for special Breakfast

This morning I made Husband's favorite - Monkeybread-

The Deets
(My take on the MIL's Recipe)
{MIL = mother-in-law}
The "Rolls"
1 can refrigerated biscuit dough (Pillsbury is my fav)
1/2 cup Brown Sugar
1/2 cup Sugar
1 tsp (or so) of Cinnamon
(Mix sugars & cinnamon for dipping)
3 TBS Butter

Icing
1/4 cup Powdered Sugar
1 TBS Milk
1/2 tsp Vanilla

Directions
Cut Biscuits into quarters
Dip in Butter
Roll in Cinnamon Sugar Mixture 
Place in High Sided Ceramic Dish  about a 1 1/2 qt.
 I like corningware 
Bake at 350 degrees for 15-20 minutes
(we like ours a little gooey so 15 is what I do)
Flip & drizzle icing over the top
Man cannot live on Sugar alone (although he'd like to try)
So we also had a Spinach, Mushroom & Tomato Omelet
Mix 2 Eggs
2 TBS Milk
Sprinkle of cheese
Cook over medium heat until 2/3 done
Add 
1 cup Spinach
1/2 diced Tomato
5 diced Mushrooms
Cook over low heat for 4-5 minutes
Add a sprinkle of cheese
Enjoy!
